The baked beans are packed in cans and processed inside retorts ( steam sterilization) at very high temperature of 121 deg C. Ellab wireless dataloggers are used to do the thermal mapping and download the core temperature of spy cans. Cook value (Co values) and Food sterilization values ( Fo values) are estimated using this logger.
